Birthday Cake!
Hello everyone,
It was my birthday last friday 29th and I made this absolutely superb, tantalising Carrot Cake using Gluten-Free flour. Below is the recipe if you'd like to try it yourself. Enjoy!
I will not pretend in any shape or form that this cake is 'healthy'just because it's gluten-free, as it does contain truck-loads of sugar. However, this is a celebration cake and celebration cakes should be whatever you want it to be......and this cake was my choice for a birthday cake.
Ingredients
300g or approx 21/2 cups of GF flour
2 tsp baking powder
1 tsp salt
1 tsp mixed spice(not Allspice)
1 tsp cinnamon
4 Free Range eggs, lightly beaten
165g or approx 2/3-3/4 sup brown sugar
290g or 11/2 cups sugar
370ml olive oil
200g or approx 2 cups grated carrot
135g crushed pineapple, drained
1/2 cup chopped walnuts
Preheat the oven to 160C. Mix the dry ingredients together.
Slowly add the other ingredients in the order given.
Pour into a greased 26cm ring tin. Bake at 160C for approx 11/2 hours or until skewer comes out cleanly.
Ice with lemon cream cheese icing.
Cream Cheese Icing
Ingredients
100g cream cheese
60g butter, softened
juice of 1/2 lemon
2 tsp lemon zest
Blend together ingredients vigorously(use food processor if easier). Add more lemon juice if you prefer a sharper taste.
